2 cups all purpose flour

3/4 cup white granular sugar

1/4 cup Amazing Creamer plus 1 tablespoon, divided

1 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon ground cinnamon

1 cup plain Greek yogurt

1/2 cup salted butter, melted

2 large eggs, whisked
-
2 tablespoons honey
-
1 teaspoon vanilla extract

1 1/4 cup fresh blueberries
Directions:

Preheat the oven to 425 degrees and line a 12 cup muffin tin with paper liners and set aside.

Amazing creamer, baking powder, baking soda, and ground cinnamon until well combined and no lumps remain.

Whisk in the yogurt, butter, eggs, honey and vanilla. Switch to a rubber spatula once the mixture thickens up.

In a small bowl, toss the blueberries with the remaining tablespoon of Amazing creamer. This will prevent them sinking to the bottom of the muffins.

Fold the blueberries into the batter. Fill each muffin cup about 2/3 full of batter, place into the oven and bake for 5 minutes.

Reduce the heat to 375 degrees and bake for an additional 13-15 minutes until browned on top and a toothpick inserted into the center comes out with just a few crumbs.Let cool for 30 minutes before serving.
