Collagen Blueberry Muffins

  • 2 cups all purpose flour⁠

  • 3/4 cup white granular sugar ⁠

  • 1/4 cup Amazing Creamer plus 1 tablespoon, divided⁠

  • 1 teaspoon baking powder⁠

  • 1/4 teaspoon baking soda⁠

  • 1/4 teaspoon ground cinnamon⁠

  • 1 cup plain Greek yogurt⁠

  • 1/2 cup salted butter, melted⁠

  • 2 large eggs, whisked⁠

  • 2 tablespoons honey⁠

  • 1 teaspoon vanilla extract⁠

  • 1 1/4 cup fresh blueberries ⁠


  • Preheat the oven to 425 degrees and line a 12 cup muffin tin with paper liners and set aside.⁠

  • Amazing creamer, baking powder, baking soda, and ground cinnamon until well combined and no lumps remain.⁠

  • Whisk in the yogurt, butter, eggs, honey and vanilla. Switch to a rubber spatula once the mixture thickens up. ⁠

  • In a small bowl, toss the blueberries with the remaining tablespoon of Amazing creamer. This will prevent them sinking to the bottom of the muffins. ⁠

  • Fold the blueberries into the batter. Fill each muffin cup about 2/3 full of batter, place into the oven and bake for 5 minutes. ⁠

  • Reduce the heat to 375 degrees and bake for an additional 13-15 minutes until browned on top and a toothpick inserted into the center comes out with just a few crumbs.⁠Let cool for 30 minutes before serving. ⁠
