Blueberry Sweet Rolls Featuring Amazing Creamer

Celebrate the warm summer days with these sweet and fruit-filled blueberry rolls. Each bite is filled with homemade blueberry jam and a hint of lemon flavor. Our French Vanilla Amazing Creamer is used in the dough for an extra airy texture and rich vanilla flavor. Yield: 12 rolls, 1 per serving


Rolls:

1 cup milk, warmed to about 110°F 

1/3 cup granulated white sugar

2 1/4 teaspoons dry active yeast (approx. 1 packet)

4 cups all-purpose flour

1 1/2 teaspoons salt 

1/3 cup French Vanilla Amazing Creamer

2 large eggs

8 tablespoons salted butter, softened


Blueberry Filling:

1 1/2 cup blueberries

1/4 cup white granulated sugar

1 tablespoon cornstarch

2 tablespoons lemon juice

1 teaspoon lemon zest 


Glaze:

2 ounces cream cheese, softened 

3/4 cup powdered sugar, more if needed

1-2 tablespoons reserved blueberry filling, optional

1-2 tablespoons milk, if needed for preferred consistency 






Directions


  1. Pour the milk into a microwave-safe measuring cup and warm for 30-45 seconds until it reaches about 110°F. You can measure with an instant-read thermometer if you’re unsure.
  2. Stir the sugar into the warmed milk. Sprinkle the yeast on top and gently stir. Allow the mixture to sit for 5-10 minutes until the yeast has bloomed and looks foamy. If this does not happen, the yeast may be inactive and you will have to restart. 
  3. Place the flour, salt, and Amazing Creamer into a large bowl attached to a stand mixer. If mixing by hand, just be sure the bowl is large enough to stir.
  4. Pour the yeast mixture into the flour, being sure to scrape any sugar from the bottom of the measuring cup. Gently mix a couple of times. Then, add the eggs and butter. Stir until the dough becomes shaggy and then place the bowl onto the mixer. Attach the dough hook and mix on level 2-3 for about 5 minutes until the dough is soft. If mixing by hand, turn the dough out onto a lightly floured surface and knead until it becomes soft and pliable, 5-10 minutes. Using either method, add a light sprinkle of flour as needed if the dough is overly sticky. It should be very soft but still able to form a ball.
  5. Place the dough into a lightly oiled bowl and cover with plastic wrap or a clean kitchen towel. Allow it to rise for 1.5-2 hours until doubled in size.
  6. While the dough rises, make the blueberry filling. Place all of the filling ingredients in a small saucepan over medium heat. As the blueberries soften, use a wooden spoon or spatula to gently break them apart. Reduce the heat to low and continue breaking the berries and stirring until a thick jam forms. This usually takes about 10 minutes. Once done, place it into a bowl to cool. Reserve two tablespoons in a separate small bowl if you’d like to add it to your glaze. 
  7. Preheat the oven to 350°F and prepare a 9x13 baking dish with parchment and set aside. 
  8. Once the dough has completed its first rise, punch it down. Gather the dough into a ball by pulling the sides towards the center while still in the bowl. Place the ball onto a lightly floured surface. 
  9. Roll out the dough into a large rectangle, about 16x12 inches long. Spread the cooled filling on top of the dough, leaving a 1-inch border. If the filling is still warm, it will become runny and squish out more easily.  
  10. With the shortest side facing you, roll the dough into a log. Press the seam into the dough to close. Cut the log into 1-inch thick rolls. You can use a sharp knife for this or unflavored dental floss for a cleaner cut. 
  11. Place the rolls into the prepared baking dish. Allow the rolls to rise for 15-20 minutes until puffy and filling the dish.
  12. Bake the rolls: for 20-25 minutes until golden brown. Let cool for 20 minutes while preparing the glaze.
  13. Glaze: In a small bowl, whisk together the glaze ingredients until smooth. Drizzle over the blueberry rolls as desired. Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the microwave by warming for 10-15 seconds. Enjoy!
