Graham cracker crust:
1 (14.4-ounce) box Graham crackers, finely ground
3/4 cup salted butter, melted
1/4 cup granulated sugar, optional for a sweeter crust
Cheesecake Filling:
32 ounces cream cheese, softened
1 cup granulated sugar
1 cup sour cream or plain Greek yogurt
1/4 cup French Vanilla Amazing Creamer
3 large eggs, whisked
Flag decoration:
18 ounces raspberries
6 ounces blueberries
Directions
- Preheat the oven to 350°F and line a 9x13 baking dish with parchment paper and set aside.
- Crust: Mix the graham cracker crumbs and butter in a large bowl. If you are using sugar, add it to this step as well. Mix the ingredients until they have the texture of wet sand and stick together when pressed between your fingers.
- Scrape the mixture into the prepared pan and press down firmly into an even layer. Bake the crust for 10 minutes then allow it to cool completely while you prepare the filling.
- Scrape down the bowl and add the sugar and sour cream. Mix on medium for 2-3 until smooth.
- Sprinkle the Amazing Creamer into the bowl and add the eggs. Mix slowly on low speed for 1-2 minutes until just incorporated. Avoid vigorous mixing.
- Pour the cheesecake batter into the cooled crust. Spread into an even layer and bake for 20-25 minutes. When done, the cheesecake will be slightly jiggly in the center and lightly browned at the edges.
- Allow the cheesecake to cool on the counter for 2-3 hours. Then, cover it with plastic wrap and place it into the fridge overnight to fully cool. This will give it the best texture and flavor.
- Decorate: Use the blueberries to make a small rectangle in the upper left corner of the cake so it resembles the blue area of the flag. Then, use the raspberries to create the stripes with red starting at the top. Slice into 12-18 pieces and serve chilled. Store leftovers in the refrigerator for up to three days.
Note: Many things can cause cheesecakes to become excessively brown such as overmixing, air bubbles, and oven variation. If your cheesecake browns too much, add a layer of whipped topping like Cool Whip to the cheesecake before adding the fruit.
Alternatively, make a quick white chocolate ganache to spread across the top of your cheesecake before adding fruit to ensure your white stripes are all the same color.
White chocolate ganache: Warm 1 cup of heavy cream in a small saucepan until beginning to steam. Pour it over 1 cup of white chocolate chips in a medium-sized bowl. Gently stir until melted and smooth. Let the mixture cool until it’s no longer hot to the touch then pour it on top of your cheesecake and spread it into an even layer. Allow the ganache to set for at least 20 minutes then add the raspberries and blueberries per the instructions.
