Coffee Cake Featuring Amazing Creamer

Yield: 12 slices, 1 per serving


Crumble ingredients:

3/4 cup all-purpose flour 

1/2 cup brown sugar, lightly packed

1 1/2 teaspoons ground cinnamon

6 tablespoons cold butter, cubed

1/4 cup chopped pecans


Cake Ingredients:

1 cup all-purpose flour

1 1/2 teaspoons baking powder 

1/2 teaspoon sea salt

1/3 cup Salted Caramel Amazing Creamer 

1/2 cup granular sugar

1/2 cup salted butter, softened

1/2 cup sour cream or plain Greek yogurt 

1/4 cup milk

2 large eggs


Directions


  1. Preheat the oven to 350°F. Line an 8-inch square baking pan with parchment and set aside. 
  2. In a medium bowl, mix the flour, brown sugar, and cinnamon. 
  3. Cut the butter into the mixture with a dough blender or two forks. It should form a mixture of small and large crumbles. Set aside in the refrigerator until you’re ready to use. The butter needs to stay cold to form crumbs.
  4. To make the batter: In a medium bowl, whisk together the flour, baking powder, salt, and Amazing Creamer until well combined then set aside.
  5. In a large bowl, beat the sugar and butter until fluffy, about 3 minutes. Stir in the milk, sour cream, and eggs until combined.
  6. Whisk half of the dry mixture into the wet mixture. Then, whisk in the remaining flour. Stir until a smooth batter forms.
  7. Pour half of the cake batter into the prepared pan and spread into an even layer. Sprinkle ½ of the crumble on top of the batter. Repeat with the remaining batter and top with the rest of the crumble.
  8. Place the pan into the oven and bake for 25-30 minutes until browned at the edges and a toothpick inserted comes out mostly clean. Let cool for 20 minutes and serve. Enjoy room temperature or warm. Store leftovers in an airtight container in the refrigerator for up to four days.
